Recipe of the Week: Cherry Pistachio Crumble Bars

Bring a batch of these delicious cherry pistachio bars to your next dinner party or family get together and watch them disappear. Everybody will love them! They are so easy to prepare using ingredients readily available in every kitchen cupboard. I like making them with a variety of preserve and nut combinations, such as peach, apricot, raspberry, strawberry, almonds, hazelnuts and walnuts. Makes 18 bars. (Chef tip: Bring the butter at room temperature quickly by putting it in a metal bowl on top of a bowl of hot water. After 10 minutes, it is ready to be used in the recipe.)

8 ounces (1 cup or two sticks) unsalted butter, room temperature

1 cup granulated sugar

1 teaspoon vanilla sugar

2 large eggs

2 3/4 cups all-purpose flour

1/8 teaspoon salt

1 cup chopped, toasted pistachio

2 cups sour cherry preserves

confectioner sugar

Heat the oven to 350F degrees. Butter a nine-inch square pan and line with parchment paper. Using an electric mixer fitted with a paddle attachment, cream the butter, vanilla and sugar on medium speed until fluffy. Add the eggs, one at a time, beating well after each addition. Add the flour and salt mix just enough to incorporate. Add the pistachio and mix until just blended.

Press about two-thirds of the mixture into the prepared pan. Spread with the cherry preserves and then crumble the remaining dough on top. Bake in the middle rack of the preheated oven until the top is lightly browned, about 50 minutes. Put the pan on a rack to cool for about 30 minutes.

Sprinkle with powder sugar and cut the bars into 1 inch squares.
